Green Tomato Relish
1 peck green tomatoes (13-15 lbs) Approx. 1 full bucket. 12 medium onions 5 green peppers 5 red peppers Grind all together, fine, then pour 1/2 Cup salt over this. Let stand over night & drain in the AM.
Next~~using a heavy aluminum kettle, mix: 1 quart cider vinegar 2 quarts water, with the above mixture, boil for 1/2 hour then drain again & then add:
5 Cups sugar 1 quart cider vinegar 1/2 Cup mustard seed 2 Tbsp. celery seed
Cook 15 minutes. Add 1 Tsp. turmeric. Can hot in pint jar.
Yield=13 pints
